Kuro at Seminole Hard Rock Hotel & Casino Debuts New Summer Menus

Hollywood, Fla. (July 12, 2016) – Seminole Hard Rock Hotel & Casino’s critically acclaimed Japanese restaurant Kuro is welcoming summer with a selection of new culinary delights from Executive Chef Alex Q. Becker. Diners can enjoy the new menu items at dinner nightly and at the restaurant’s Saturday lunch from noon to 3 p.m.

As part of Kuro’s signature style, Becker highlights classic Japanese ingredients and techniques to create contemporary dishes that offer bold and complex flavors. Guests will find an array of delicious additions to the restaurant’s robust menu, taking the experience to the next level. New Sea items include Salmon Karé – seared salmon in a Japanese curry with cauliflower furikake and spuma; Florida Snapper simmered in a seasoned dashi broth with Japanese vegetables; Scallop Wasabi – seared sea scallops with pickled wasabi and soba-hijiki salad; Grouper Cartoccio – Florida Grouper steamed with a light soy broth with peppery radishes and kimizu sauce; and Shell-Roasted Lobster – robata charcoal-grilled lobster with a shiso-kimizu sauce.

Fans of Kuro’s Robata options will enjoy three new varieties, including Berkshire Pork Belly – thinly sliced pork belly, glazed with sweet miso, negi and ginger; Braised Wagyu Short Rib with spicy miso glaze; and Salmon Belly with umeboshi miso and green apple slaw. Rounding out the new dinner lineup is King Crab Tempura – Alaskan king crab legs with roasted garlic butter powder and crispy Okinawan potatoes.

“Crab legs and butter are made for each other,” Becker said. Like many of his dishes, he gives the classic a whimsical twist by turning rich butter into a fine powder akin to powdered sugar that is sprinkled over the crab meat.

A staple to Kuro lunch, Noodles offerings now include three new ramen dishes. Hot for summer is the Spicy Miso Ramen with slow-cooked chicken thigh and marinated egg in a spicy miso chicken broth with enoki mushrooms, topped with hanakatsuo flakes. Other ramen additions to Saturday’s lunch menu include Yuzu Shio Ramen with slow-cooked chicken thigh, marinated egg in a light yuzu chicken broth, with marinated mushrooms, sugar snap peas and yuzu koshyo; and Hiyashi Ramen – chilled ramen noodles seasoned in a goma dare sauce with king crab, seasoned egg and summer vegetables.
